I decided to start blogging with the recommendation of my co-worker. I was telling her about how I've cooked dinner for my family for the past 3 nights, spending $10 or less on each meal. I thought, "That is a great idea!" I went home, told Leonard (my insanely adorable husband) about it and he said "You should. Should I do one, too?" I said "What are you going to blog about?" He said "Sports. I already have one guy who said he'd follow me." If anyone knows Leonard, they know he's like a living Sports Almanac. So, of course I supported his idea... but at the same time I thought "Crap. Either he's going to take forever to type up a blog, or he's going to ask me to type it up." :) So, this is how I decided to start blogging. I also thought about how my 4 amazing children can read my blogs while I'm here and after.
Anyways, you probably saw the title and started wondering why I chose that... Well, long story short, Leonard always says the most random & hilarious things and I asked him one night after I stopped laughing so hard at what he had to say, "Where does this stuff even come from? It's freakin' crazy town in there. I'm gonna start calling you "Crazy Town" from now on." And that moment was the birth the the family phrase "crazy town". If we see someone going nuts, we (kids included) say, "dude, that's crazy town". If someone says something that's absolutely absurd, we say "No way! That's crazy town!" This blog is going to be about my crazy town. I will post about recipes, dinner ideas, funny stuff, random things, etc. I'll do my best to keep this from getting boring.
Since you've invested your time reading, here is one of my inexpensive recipes. :) I hope you keep following me!
Cheeseburger Pasta (My better version of Hamburger Helper)
Ingredients:
2 tbsp vegetable oil
1.5 lbs 80/20 ground beef
1 box of pasta (I used farfalle/bow ties)
1 firm tomato, diced
1 small onion, finely chopped
2 tbsp fresh garlic, minced
1 jar of pasta sauce (I used three cheese)
1/4 cup of vinegar
1/4 cup of worcestershire sauce
2 tbsp sugar
1/2 lb of grated cheddar cheese
1 tbsp garlic powder
1/4 cup ketchup
salt & pepper to taste
Directions:
Boil water in a large pot to cook your pasta. When water starts boiling, add pasta and cook as directed. Drain, rinse, and set aside.
Heat a large skillet over medium-high heat. When skillet is hot, add vegetable oil. After oil is heated, add onions and garlic and sautee until onions start to turn clear. Add ground beef and cook until brown. After ground beef is brown, drain fat/oil. Add in the tomatoes. Sautee for 5 minutes to allow tomatoes to soften. Add in worcestershire sauce, vinegar, sugar, pasta sauce, garlic powder, ketchup, salt & pepper. Lower heat to low/medium. Simmer sauce for 15 minutes, stirring occasionally. Mix in cooked pasta, continue to simmer for 5 more minutes. Remove from heat & top with cheddar cheese. Cover pasta to allow cheese to melt.
I served mine with garlic bread. Hubby bought a loaf of french bread from the grocery store for $1.50. I sliced it, spread butter on each slice, sprinkled with garlic powder and put them in the oven (Preheated to 350) for 10 minutes.
I hope you enjoyed reading and if you do decide to cook my recipe, I hope you enjoyed it! FOLLOW ME!!! :)
